This is just too easy to make and it always makes my mouth water. I received this recipe from my high school arts teacher, who's vegan. Try out this recipe- I advise you to.
Type of dish: pasta
Cost: medium
Difficulty: easy
Time: 25min
Serves: 2-4
Preparation time: 10 min
Cooking Time: 12 min
What you need to make this dish:
Cutting board, knife, blender, spoon, saucepan, colander, bowl
Ingredients:
- 1 celery package
- 1 ripe avocado peeled and pitted
- 1 kiwi peeled
- 1/5 cup olive oil
- 1,5 l of water
- Salt
- Black pepper
- Juice from half of a lemon
- 1/4 packet of spaghetti
How to prepare:
Turn on the stove on high, heat saucepan with water. When water starts boiling, add a spoon of olive oil and a pinch of salt. Stir and add the spaghetti. Let it cook for the time on the packet ( around 10-12 min) . In a blender, put in the peeled and pitted avocado, add the olive oil, add the bigger celery stalks and some leaves, add the lemon juice, salt and pepper and the peeled kiwi. Turn the blender on, and mix until paste is smooth. Taste and add some more salt or lemon juice if required. Set aside. From the remaining celery, cut it in slices, put in a bowl, sprinkle with salt and pepper, add lemon juice and olive oil, mix well.
When the pasta is done, drain it in a colander, and put under cold water to cool down the pasta. Place the pasta in a bowl, put some celery on top, and add 2-3 spoons of the avocado mixture. Ready to eat!
Additional information:
You have to cool down the pasta before adding the avocado paste, as avocado with warm product starts to brown which looks disgusting. But still good.
